Dinner in Kota Kinabalu
OITOM is a fine-dining restaurant in Kota Kinabalu, at Sutera Avenue off Jalan Coastal. Chef-owner Raphael Lee serves New Sabah Cuisine: two tasting menus built on Sabah's own farms, forests and seas. Dinner is Monday to Saturday, 7pm to 11pm.
A Kota Kinabalu restaurant built on Sabah
New Sabah Cuisine takes Sabah's culinary heritage and cooks it with contemporary technique. Produce comes from the foot of Mount Kinabalu, seafood from the waters of Borneo, and rarer ingredients such as buah kulim, tuhau and Kundasang highland produce from farmers, fishers and foragers across the state. The menu changes with Sabah's micro-seasons, and a few days at most separate harvest from plate.
The name OITOM means black in the Kadazan-Dusun language. Chef Raphael Lee, who is part Kadazan, treats each menu as one complete story rather than a card of à la carte choices.
Two tasting menus
Introduction, 5 courses, RM88 per person. A first taste of New Sabah Cuisine: black garlic tortellini with kodop and ricotta, the signature brioche roll, tuhau laksa with aged coral grouper, a wagyu course, and panggi to finish.
Heritage, 8 courses, RM316 per person. The full account, from coconut candlenut with tiger prawn and Hokkaido scallop, through salai with kulim emulsion and koji Tenom chicken, to tompeh and panggi.
Optional wine pairings are available. Prices exclude the 15% service charge and government tax. See the full menu.
